Any lupini lovers in the house? This protein-packed legume is a staple of Italian aperitivo, often taking the spot of chips and nuts. Yes, it’s that good. You can now find lupini in brine in most grocery stores and we’re here for it! In this recipe, we match them with their olive besties to create a snack that pays tribute to one of our all-time favourite cocktails: the mighty Negroni. We even add a touch of Campari! This simple, chic, and super fragrant snack is inspired by a signature antipasto served at Vesta, our Villeray trattoria. Let’s get the party started!

Plan an additional resting time of 20 minutes for the olives and lupini. You can keep the infused olive oil to make fragrant dressings.

  1. In a medium-sized pot, combine the olive oil, olives, lupini, garlic, rosemary, orange peel, lemon peel, and chili flakes if using.
  2. Bring to a gentle simmer over medium heat and cook for about 10 minutes.
  3. Remove from the heat and set aside for 20 minutes to infuse.
  4. Strain the olives and lupini from the oil, and transfer to a bowl.
  5. Add the Campari and toss to combine. Serve slightly warm or at room temperature. Buon appetito!
