This easy, speedy version of the unwavering pasta salad leans on an iconic Italian flavour profile: the forever delicious tomato-basil-mozzarella trio. We suggest you go all out with generous dollops of stracciatella (not the soup nor the ice cream flavour of the same name, but the incredibly luscious fresh cheese!) or burrata, but bocconcini works great too. And while this recipe is perfect to highlight that pesto you made from scratch, remember that a good-quality store-bought pesto will do the trick just fine if you’re in a rush. A joyous, essential pasta salad to add to your roster!

  1. Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, toss the pasta with the basil pesto until well coated.
  3. Add the sun-dried tomatoes and cherry tomatoes. Mix gently.
  4. Transfer to a serving dish and top with hand-torn stracciatella or burrata.
  5. Season with salt and pepper to taste. Garnish with fresh basil, if desired. Serve at room temperature or chilled. Buon appetito!
