- Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water to cool.
- In a large bowl, toss the pasta with the basil pesto until well coated.
- Add the sun-dried tomatoes and cherry tomatoes. Mix gently.
- Transfer to a serving dish and top with hand-torn stracciatella or burrata.
- Season with salt and pepper to taste. Garnish with fresh basil, if desired. Serve at room temperature or chilled. Buon appetito!
