Kale, sweet potato, apple and cheddar salad

Sure, summer’s fun, but there’s something so charming about fall. With its colourful harvests, it just makes you want to get cooking. And not to brag, but this salad boasts the best the season has to offer! It’s the perfect occasion to showcase delicious local products and discover a sumptuous vinaigrette with a dash of sweetness.

Preparation

  1. Preheat the oven to 425F.
  2. In a large bowl, mix the potatoes with the olive oil. Season with salt and black pepper, to taste.
  3. Place the potatoes on a parchment-lined baking sheet and roast in the oven for 25 minutes, flipping once, halfway through. Once the potatoes are fork tender, remove and set aside.
  4. For the vinaigrette: in a large bowl, combine the vinaigrette ingredients with salt and black pepper to taste. Whisk well.
  5. Add the potatoes, kale, sliced apples and cheese curds to the bowl with the vinaigrette. Season with salt and black pepper, to taste. Toss until well combined.
  6. Transfer to plates or platter, top with toasted hazelnuts. Serve.
