We thought of everything for this one. The few minutes it takes to perfectly cook the flaky, tasty fish are enough to prepare a nice polenta and a vibrant vegetable side, so that everything comes together at the same time.   1. In a large pan, spread the Stefano Mediterranean sauce evenly to cover the bottom.
  2. Place the cod fillets on top of the sauce and season with salt and pepper to taste.
  3. Cover and cook over medium heat for about 10 minutes, or until the cod flakes easily with a fork.
  1. While the fish is cooking, steam the broccoli and cauliflower florets until just tender, about 5 to 7 minutes.
  2. Toss the cooked vegetables with the olive oil and white wine vinegar condiment. Season with salt and pepper to taste.

FOR THE POLENTA

  1. Still while the fish is cooking, bring the water (or broth) to a boil in a saucepan. Whisk in the polenta in a slow stream, stirring constantly.
  2. Cook for 2 to 3 minutes (or according to the package instructions) until thickened. Stir in the butter, salt, and pepper. Keep warm.
  3. Spoon the polenta onto the plates as a base. Top with a piece of cod and steamed vegetables.
  4. Finish with pan juices and herbs. Add a drizzle of spicy oil if desired. Buon appetito!
