Practically everyone has heard of the famous devilled eggs (the American cousin to the French mimosa eggs) and most have served them at some festive occasion or another. It’s one of those dishes that everyone has their own recipe for: more or less mayo, pickles, no pickles, tuna, paprika, no paprika, etc. We’ve come up with three Mediterranean-inspired variations for you to add some sunshine to your next gathering. In fact, something tells me this trio of mimosa eggs would be perfect for a Mother’s Day brunch. Let me know if you can pick a favourite, because I can’t choose!

Preparation

  1. Blend all the ingredients of the chosen filling in a food processor until smooth.
  2. Transfer the mixture into a piping bag or use a spoon to fill the white egg cavities.
  3. If desired, garnish with fish roe, microgreens, fresh or dried herbs, paprika, chopped nuts, etc.
