- In a pan over medium-high heat, add about 2 tbsp of olive oil, the butter, and the sliced onion. Season with the oregano, salt, and pepper. Once soft and golden, deglaze with the balsamic vinegar. Cook until deeply caramelized, for a total of 5 to 7 minutes.
- In a bowl, combine the chopped marinated red peppers, olives, and spicy peppers. Add the caramelized onions, a drizzle of olive oil (about 1 tbsp), and the white wine vinegar condiment. Season with pepper and mix well.
- Butterfly the sausages lengthwise (slice almost all the way through and open them flat). In a pan over medium-high heat, add some olive oil if necessary (about 1 tbsp) and cook the sausages for about 4 to 5 minutes each side. Use a grill press, heavy spatula, or even a sturdy plate to press the sausages flat as they cook—this helps them brown evenly and prevents curling.
- Preheat the oven to broil.
- Slice the rolls in half horizontally and remove some of the bread from the centre to create room for the filling. Lay 2 slices of Provolone on each half and broil for a few minutes, until melted.
- Place the cooked sausages on the bottom buns, and top with the pepper, onion, and olive mix. Close the sandwich and serve warm. Buon appetito!
