Friggione Bolognese

A classic condiment from Bologna. Eat it cold or room temp with any grilled seafood, chicken, sausages and even sandwiches. It's sweet, sour, acidic—it's the perfect peppy partner to any dish!

  1. In a large frying pan, heat olive oil over medium heat. Add the onions and cook until translucent, about 3-5 minutes.
  2. Add the peppers and cover while cooking.
  3. In the meantime, fill a large bowl with water and ice. Set aside.
  4. Bring a large pot of water to boil. Cut an X on the bottom of each tomato. Place the tomatoes into the boiling water and cook until skins begin to peel off, about 20-30 seconds.
  5. Transfer tomatoes to the bowl of ice water and allow to cool for 1-2 minutes.
  6. When cool enough to handle, peel the skin off each tomato. Cut each tomato in half and remove the pulp and seeds. Cut tomatoes into thin strips.
  7. Add the tomatoes to the vegetables and cook covered for about 1 hour, stirring occasionally.
  8. Once cooked, stir in the white wine vinegar condiment.
  9. Serve with grilled sausages, chicken, fish or add in a quinoa salad. Buon appetito!
