GRILLED PEACHES WITH MOZZARELLA DI BUFALA

Grilling fruit on the BBQ is less common than vegetables and yet it's so delicious! Here is a recipe for grilled peaches served with mozzarrella di bufala cheese, fresh mint, a drizzle of olive oil and a little crushed chili...it's the perfect starter for a summer evening!

  1. Preheat the grill to medium-high heat. 
  2. In a bowl, add the peaches, 2 tbsp of the olive oil, salt, and black pepper to taste. Toss to coat.
  3. Place the peaches on the grill and cook for 3 to 4 minutes per side, until nicely charred and slightly softened. 
  4. Arrange the peaches on a platter. Place the mozzarella pieces over the fruit. Garnish with the mint, chilies, and remaining 30 ml (2 tbsp) olive oil. Season with salt and black pepper to taste.
