GRILLED PEACHES WITH MOZZARELLA DI BUFALA

- Preheat the grill to medium-high heat.
- In a bowl, add the peaches, 2 tbsp of the olive oil, salt, and black pepper to taste. Toss to coat.
- Place the peaches on the grill and cook for 3 to 4 minutes per side, until nicely charred and slightly softened.
- Arrange the peaches on a platter. Place the mozzarella pieces over the fruit. Garnish with the mint, chilies, and remaining 30 ml (2 tbsp) olive oil. Season with salt and black pepper to taste.
