LEMON OLIVE OIL CAKE

The name gives it away! This olive oil cake is super fragrant with lemon, extremely moist thanks to extra-virgin olive oil, and the interior is as yellow as the sun. A slice is perfect as is, but a topping of fresh berries and whipped mascarpone cream really makes it shine.

  1. Preheat the oven to 350°F.
  2. Spray a 9- inch cake pan with cooking spray.
  3. In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  4. In another large bowl, whisk together the eggs, sugar, olive oil, milk, and lemon zests.
  5. Add the wet ingredients mixture to the dry ingredients. Mix until well combined.
  6. Transfer the mixture to the prepared cake pan and bake, on the middle rack, for 90 minutes or until a toothpick comes out clean.
  7. Invert the cake onto a cooling rack. Allow cake to cool completely.
  8. Dust the cake lightly with powdered sugar before serving.
