Not a classic by mistake, we believe panna cotta is worthy of a thousand praises. It’s super easy to prepare, requires only a few simple ingredients, and offers the perfect creamy canvas for a world of flavours and textures. For this version, we wanted to celebrate the joys of summer by featuring our famous local berries and a delicate garnish that could not be more Italian. Have you gone strawberry, raspberry, blueberry, honeyberry or any other “erry” picking? Now’s the time to show off your stash! Make sure to save room for this rich yet refreshing dessert.

  1. In a medium-sized saucepan, combine the cream, sugar, and vanilla. Bring to a simmer over medium heat. Turn off the heat and set aside.
  2. Meanwhile, pour the water into a small bowl and sprinkle the powdered gelatin on top. Let the gelatin bloom for 5 minutes.
  3. Bring the cream mixture back to a simmer over medium-high heat. Incorporate the set gelatin and mix until fully dissolved.
  4. Divide the cream mixture equally into 8 ramekins or mason jars (125 ml or ½ cup each). Cover and refrigerate until set, 4 hours to overnight.
  5. To serve, top with the berries and add a drizzle of vinegar and olive oil.
