We often take it for granted, but it’s usually packed with goodies that can be the base of a perfectly delicious meal. This simple and quick pasta salad encourages you to raid your pantry—because we use what we have and we make it delicious! Especially when the recipe is this versatile. Feel free to add or replace ingredients depending on what you find or crave. Anchovies, capers, roasted peppers, cornichons… just a few extra ideas to get the inspiration flowing. Possibilities are pretty much endless here, and we love it!

Let the pasta salad cool in the fridge for about an hour before serving.

  1. In a large pot of salted boiling water, cook the pasta for 1 minute more than package instructions (pasta should not be al dente for a pasta salad).
  2. Once cooked, drain the pasta and transfer to a parchment-lined baking sheet to let it cool. To prevent sticking, pour in 1 to 2 tbsp of extra virgin olive oil and toss to coat.
  3. Once cooled, transfer the pasta to a large bowl. Add in the tuna, artichokes, and sundried tomatoes. Pour in the olive oil and vinegar and season with salt and pepper to taste. Toss to combine.
  4. Cover the bowl and leave in the fridge to cool for about 1 hour. Before serving, add the chopped parsley if desired and toss once more. Buon appetito!
