FOR THE FISH
- In a large pan, spread the Stefano Mediterranean sauce evenly to cover the bottom.
- Place the cod fillets on top of the sauce and season with salt and pepper to taste.
- Cover and cook over medium heat for about 10 minutes, or until the cod flakes easily with a fork.
- While the fish is cooking, steam the broccoli and cauliflower florets until just tender, about 5 to 7 minutes.
- Toss the cooked vegetables with the olive oil and white wine vinegar condiment. Season with salt and pepper to taste.
FOR THE POLENTA
- Still while the fish is cooking, bring the water (or broth) to a boil in a saucepan. Whisk in the polenta in a slow stream, stirring constantly.
- Cook for 2 to 3 minutes (or according to the package instructions) until thickened. Stir in the butter, salt, and pepper. Keep warm.
- Spoon the polenta onto the plates as a base. Top with a piece of cod and steamed vegetables.
- Finish with pan juices and herbs. Add a drizzle of spicy oil if desired. Buon appetito!
