- In a food processor, combine the artichoke hearts, lemon zest, lemon juice, olive oil, grated Pecorino Romano, basil, parsley, and mint. Pulse until mostly smooth, but still slightly textured. Season with salt and pepper to taste. Set aside.
FOR THE SANDWICHES
- Heat a frying pan over medium-high heat. Cook the sausages for 12 to 15 minutes, turning occasionally, until browned and fully cooked through. Transfer to a cutting board and let rest for a few minutes before slicing in half lengthwise.
- In the same pan, heat the olive oil over medium-high heat. Add the sliced mushrooms and cook for 6 to 8 minutes, stirring occasionally, until golden brown and tender. Season lightly with salt and pepper.
- Slice the focaccia open. Generously spread the artichoke pesto onto both sides of the bread.

Layer the bottom half with the sautéed mushrooms, sliced Roman sausage, fresh arugula, and the Pecorino Romano shavings. Close the sandwich, cut into 4 equal portions, and serve immediately. Buon appetito!
