Shrimp with salsa rosa

The first time I went to Italy, that’s where I first discovered salsa rosa. It’s a bit like ketchup mixed with mayo or Thousand Island dressing, but the Italian version, all made from scratch,15 minutes and you're done. I love this recipe so much, I wanted to create my own version of it.

You can spread it on sandwiches, serve it as a dip or garnish … it’s the sauce that goes with everything! With a crisp glass of white wine, fried food and great company, it’s heaven.

SALSA ROSA:

  1. In a small pan, heat olive oil then add garlic, onion, carrot and hot peppers. Let cook for about 5 minutes.
  2. Add the Stefano Marinara sauce, vinegar, sugar and season with salt and pepper.
  3. Simmer on medium heat for 7-10 minute.
  4. Remove from stove and let cool.
  5. Place mixture in food processor with mayonnaise and sriracha. Blend until smooth.

SHRIMPS:

  1. Place shrimp and old bay in a sandwich bag and shake well so the old bay coats the shrimp.
  2. Heat a frying pan and add olive oil and butter.
  3. Once butter is melted and slightly golden, add shrimp and cook for 2-3 minutes.
