Tortellini alla Gigi

Tortellini alla Gigi, made with love! When I was young, we’d often go to Casa Cacciatore on rue Jean-Talon in Little Italy. Sadly, this restaurant isn’t open anymore. But they served the most amazing tortellini alla Gigi and I ordered it every time.
The secret ingredient is the rosé sauce: simple, hearty & silky. As a kid, I literally lived on water and creamy sauces!

  1. Cook tortellini in a large saucepan of boiling, salted water.
  2. In a pan, heat olive oil and sauté mushrooms until golden. Add prosciutto and let cook a few minutes. Then add onion and garlic.
  3. Deglaze with white wine and let reduce, about 2-3 minutes.
  4. Add the sauce and nutmeg to the pan. Heat and stir.
  5. Add cooked tortellini to the sauce, mix and serve with grated Parmesan.
