  1. Cut the ends off the citrus fruits. Stand the citrus upright and using a sharp knife, cut off the peel and any white pith, following the curves of the fruits. Slice the citrus crosswise into ¼-inch rounds.
  2. Arrange the citrus slices on a large serving platter. Garnish with the olive oil, mint, oregano, olives, and pomegranate seeds. Season with the coarse sea salt and black pepper to taste. Serve.
