LEMON AND HERB ASPARAGUS

Welcome Spring and asparagus season with this simple lemon and herb asparagus recipe. It's made better by a couple of key ingredients: fresh asparagus & herbs, parmesan shavings, pine nuts, lemon zest and extra virgin olive oil. Serve with fish or grilled meat.

  1. Finely chop the herbs.
  2. In a saucepan of salted boiling water, cook the asparagus until al dente. Drain and let them cool down.
  3. Place the asparagus in a large dish. Drizzle generously with olive oil.
  4. Add the lemon juice, grated Parmesan, and herbs.
  5. Season with salt and pepper and mix everything well. Keep refrigerated for at least 1 hour.
  6. When ready to serve, add parmesan shavings and a few pine nuts to garnish.
