Coffee Panna Cotta

Plan a minimum of 4 hours for the panna cotta to set.

- In a small bowl, sprinkle the gelatin powder over the cold water and let bloom for 5 minutes. Set aside.
- In a saucepan, combine the heavy cream, milk, sugar, shot of espresso, salt, cinnamon, and whole espresso beans. Cook over medium heat, stirring occasionally, until the mixture is hot (do not boil) and sugar is dissolved.
- Remove from heat, cover, and let the mixture steep with the coffee beans for 15 to 20 minutes.
- Strain out the coffee beans using a fine-mesh sieve.
- Rewarm the infused cream mixture slightly if it has gotten cold and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into ramekins or glasses. Refrigerate for at least 4 hours, or until set.
- Serve chilled and top with whipped cream or a dusting of cocoa powder if desired. Buon appetito!
