MAPLE GLAZED CARROTS

If there's one veggie I always have in the fridge, it's carrots. We often eat them as crudités or in salads, so I like to change things up by cooking them as a side dish that goes well with roasted meat. Great for a sugar shack-inspired dinner or brunch.

  1. In a large, deep skillet over high heat, bring the broth and carrots to a boil. Pepper to taste. Reduce heat and simmer carrots until tender and liquid has evaporated, 10 to 12 minutes.
  2. Add the butter and maple syrup, stir and cook until the carrots are glazed, 7 or 8 minutes. Season with salt and pepper as needed.
  3. Garnish with chopped chives and serve.
