Pangrattato, often called “poor man’s Parmesan,” deserves a spot in your pantry! This Italian staple turns humble breadcrumbs into a crispy topping, boosted with garlic, herbs, Parmesan and olive oil for a hit of umami and crunch. Sprinkle it over pasta, seafood, roasted veggies, salads and pretty much anything that could use a little extra crunch and flavour.

Store in an airtight container at room temperature for up to 1 week—and don’t be surprised if you start putting it on everything!

  1. In a large pan, heat the olive oil over medium heat. When hot, add the garlic and cook for 1 to 2 minutes, until just golden.
  2. Add the breadcrumbs and oregano. Season with salt and pepper to taste. Toast for 1 to 2 minutes, or until the breadcrumbs are coated with oil and lightly golden. Remove from the heat.
  3. Incorporate the parsley and Parmesan. Transfer to a plate, in an even layer. Set aside.
