It's the time of year when the gardens are overflowing with tomatoes, zucchini and eggplants and nothing better than a classic ratatouille to show them off! A simple and fresh ratatouille with a magic touch : Stefano marinara sauce. Eat it hot or cold, with fish or chicken, or as a main course, ratatouille is always good!

  1. In a large pan, heat the oil and add onion.
  2. When the onion becomes translucent, add the eggplant and let cook for 3-4 minutes.
  3. Add the zucchini and peppers. Let cook another 5 to 7 minutes.
  4. Pour in the marinara sauce and let simmer for 5 to 7 minutes until tender.
  5. Season with salt and freshly ground pepper and add a few fresh basil leaves.
  6. Cover and let sit for a few minutes before serving. Buon appetito!
