  1. Preheat the oven to 300 °F.
  2. In a bowl, add the almonds, olive oil, fennel pollen, orange zest, and sea salt. Toss to coat.
  3. Spread the prepared almonds evenly on a baking sheet.
  4. Roast in the oven for 15 minutes. Toss and continue roasting for another 15 minutes, or until fragrant and lightly golden.
  5. Let cool slightly before serving. Buon appetito!
