- In a bowl, add the almonds, olive oil, fennel pollen, orange zest, and sea salt. Toss to coat.
- Spread the prepared almonds evenly on a baking sheet.
- Roast in the oven for 15 minutes. Toss and continue roasting for another 15 minutes, or until fragrant and lightly golden.
