ROASTED ASPARAGUS AND PORTOBELLO MUSHROOMS

This is an easy recipe that is full of flavour, thanks to the floral taste of olive oil and the sweet notes of the balsamic vinegar. Celebrate spring vegetables like asparagus and mushrooms or change them up for some of your favourites if you want. You can roast these in the oven or even grill them on the barbecue for a perfect side dish.

  1. Preheat the oven to 450F.
  2. Place asparagus and mushrooms, in an even layer, on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and black pepper, to taste. Toss to coat.
  3. Bake in the oven, stirring occasionally, for 15 minutes.
  4. Remove from the oven, add the butter and mix well.
  5. Bake for another 5 minutes.
  6. Remove from the oven and place roasted vegetables on a platter.
  7. Top with the arugula and drizzle with olive oil and balsamic vinegar. Serve.
