My grandmother would make eggs in purgatory a lot for us growing up in her small apartment on Henri-Julien street, with a courtyard overlooking Jean-Talon Market. My grandparents would have us over for breakfast, lunch or dinner. It’s a simple, budget-friendly recipe that can be enjoyed any time of day, and we never got tired of eating it.
A runny egg yolk, crusty bread and green salad or veggies and you’re good to go!

  1. In a large skillet, heat the Arrabbiata sauce at low heat. Add the parsley and dried oregano.
  2. Break eggs one at a time on top of the sauce and let cook until the egg whites are opaque.
  3. Add salt and crushed chili flakes to taste.
  4. Garnish with grated Parmesan cheese and serve with country-style bread.
