  1. Pour the wine and brandy (if using) into a saucepan. Add the brown sugar, spices, and citrus peels.
  2. Warm gently over low-medium heat until steaming, without boiling.
  3. Simmer for 10 to 15 minutes to allow the flavours to infuse.
  4. Strain if desired, and serve hot in heatproof glasses or mugs. Salute!
