  1. Season the rabbit pieces with salt and black pepper, to taste.
  2. Heat a large dutch oven over medium-high heat. Add olive oil. Once oil is hot, add the rabbit and sear until golden brown on both sides, about 2-3 minutes.
  3. Add the garlic and chili flakes and cook for 1-2 minutes. Deglaze with the wine. Add herbs and olives and let cook for 2 minutes.
  4. Add the tomato sauce, stir and place the lid over the dutch oven. Cook for 30 minutes then remove the lid and continue cooking, until the sauce thickens slightly, about 10 minutes. Meat should be tender.
  5. Place on a large platter and serve.
