It’s safe to say that pretty much everybody loves meatballs. And take it from us: kids, adults, and kids-at-heart alike will gladly dig into this copious and comforting dish. We suggest serving these saucy meatballs with a nice polenta, a side that is not only easy, creamy, and versatile, but also gluten-free. No doubt, polenta deserves a bigger place in our weekly plates. And as if that wasn’t enough, this legendary dish will be ready in about 20 short minutes. All in all, a fail-safe dish!

  1. Cut each meatball in half and shape each piece into a smaller meatball.
  2. In a large saucepan, bring the marinara sauce to a simmer over medium heat. Add the meatballs.
  3. Cover and let the meatballs cook fully, 15 to 20 minutes.
  4. In another saucepan, cook the instant polenta according to the instructions on the package.
  5. Once the polenta is cooked, incorporate the grated Parmesan and butter with a whisk until fully combined. Salt and pepper to taste.
  6. To serve, top each serving of polenta with meatballs and sauce. Garnish with more Parmesan, a drizzle of finishing oil, and parsley.
