Italian-style Baked Beans

What would a sugar shack meal be without its famous baked beans? In Quebec, baked beans are serious business. Many families pass down their signature recipe from generation to generation, and some adventurous folks even cook them underground near the campfire. It’s amazing what a few humble beans can turn into with a little patience, love… and maple syrup! Without reinventing the wheel completely, our version gives a nod to Italian tradition by switching the classic lard with pancetta and by adding our authentic sausages to the mix. Don’t forget to make a bit extra—it freezes really well!

  1. Preheat the oven to 400°F.
  2. In a Dutch oven, heat the olive oil on medium heat. Add the pancetta and cook until it starts rendering its fat.
  3. Once the pancetta is rendered, add the sausages and cook for 3-5 minutes, until golden brown. Add garlic, onion and chili flakes. Cook for another 2-4 minutes.
  4. Add the sage and cook for an additional minute, until fragrant.
  5. Add the sauce, beans, vinegar and maple syrup. Stir well. Season to taste with salt and pepper.
  6. Bring to a boil and bake in the oven, covered, for 15 minutes. Uncover and bake for an additional 5 minutes. Serve and enjoy!
