- Season the chicken breasts with salt and pepper. Heat the olive oil in a large pan over medium-high heat and sear the chicken 5 to 6 minutes per side, or until golden and cooked through. Remove the chicken from the pan, let it rest for a few minutes, then slice it into strips.
- In the same pan, add the Alfredo with pesto sauce and chicken broth. Rinse the jar with 1 to 2 tablespoons of water, shaking to loosen any remaining sauce, and pour it into the pan. Bring to a gentle simmer.
- Stir in the orzo. Cook, stirring occasionally, until the pasta is tender and the sauce is creamy, about 10 to 12 minutes.
- Nestle the chicken slices back into the pan. Add the baby spinach and cherry tomatoes. Cook until the spinach is wilted and the tomatoes have softened slightly, about 2 to 3 minutes. Taste and adjust seasoning as needed.
- Serve immediately, garnished with grated Parmesan and fresh basil, if desired. Buon appetito!
