A Taste of Spring

Spring has finally sprung, and after such a long, snowy winter, we welcome it with open arms!

We might still get a few snowflakes, but the days are getting longer, which means more sunlight, more warmth, and more colour.

What better way to kick off the new season than with crisp vegetables, zesty salads, and vitamin-packed dishes? It’s like a preview of summer! Here are our favourite spring-inspired recipes to brighten up your days—and your plates.

As we wait for the abbondanza of the warmer seasons, and while lettuce prices are still going through the roof and we’ve had enough of boiled veggies, we suggest you turn your attention to the glorious root vegetables. They once again have our back in this surprisingly fresh, versatile, and colourful salad. It’s perfect as a side, but also shines bright as a base for a full meal. Just add tuna, beans, or any other protein and call it a day!

 

Lemon and Herb Asparagus

Welcome Spring and asparagus season with this simple lemon and herb asparagus recipe. It’s made better by a couple of key ingredients: fresh asparagus & herbs, parmesan shavings, pine nuts, lemon zest and extra virgin olive oil. Serve with fish or grilled meat.

Here’s something I tell people all the time: don’t be afraid of risotto, it’s much easier than you think. This spring recipe is vegan, inexpensive, and can be made rather quickly. It’s a great way to discover risotto for a special occasion and make it a chic, yet accessible dinner.

A seasonal dish where the star of the recipe can be bought locally! The fragrant saffron makes it luxurious, but you don’t have to add much — a little goes a long way. Luxury meets seasonality.

Fusilli primavera literally translated into “Spring Fusilli” and is the quintessential traditional Italian recipe to make in spring. It contains fresh vegetables such as asparagus and peas and many herbs. The pangrattato with the addition of lemon zest adds brightness and crunch. With so many flavours, there’s no need to add cheese which makes this recipe 100% vegan.

 

Roasted Asparagus and Portobello Mushrooms

This is an easy recipe that is full of flavour, thanks to the floral taste of olive oil and the sweet notes of the balsamic vinegar. Celebrate spring vegetables like asparagus and mushrooms or change them up for some of your favourites if you want. You can roast these in the oven or even grill them on the barbecue for a perfect side dish.
